Cinnamon Chia Oatmeal with Apples & Walnuts

Ingredients 

  • ½ cup rolled oats
  • ½ cup skim milk (or unsweetened plant-based milk)
  • ½ cup water
  • 1 tbsp chia seeds
  • ½ tsp ground cinnamon
  • pinch salt
  • ½ apple (diced (any variety))
  • 1 tsp pure maple syrup (optional, to taste, or can use honey)
  • ½ tsp vanilla extract (optional)

Instructions 

  • In a small pot, combine oats, milk, water, chia seeds, cinnamon, and salt. Stir well.
  • Add in the diced apple and bring to a gentle boil over medium heat.
  • Reduce heat to low and let simmer, stirring occasionally, for about 5–7 minutes until the oats are soft and the mixture thickens.
  • Stir in the maple syrup and vanilla extract (if using).
  • Pour into a bowl and top with more apples, nuts, and a dash of cinnamon.
  • Serve warm and cozy!

    1. Sorry your comment snuck past me and just saw it now. We have a vegetarian category and quite a few of those recipes are vegan or can be made vegan. If you start there it can help limit the recipes. I will look into making a vegan category.
